I've been baking today. If you are in the mood, why not try these recipes...

Energy Biscuits.

125g butter 1 egg
1/2 cup sugar 1 and 3/4 cups self raising flour
1/2 cup brown sugar 1/2 cup Milo
1/2 teaspoon vanilla extract/essence

Cream butter, sugars and vanilla. Beat in egg. Fold in sifted flour and Milo (makes a fairly dry mix). Roll mixture into balls and place on a greased cookie tray. Flatten with fork and bake for 12-15 minutes at 180 degrees celsius.

Spicy Apple and Oat Slice.

1 and 1/2 cups plain flour 1 teaspoon ground cinnamon
1 cup rolled oats 185g butter, melted
1 cup sugar 400g can pie apple
1/2 cup dessicated coconut extra teaspoon cinnamon


1 cup flour 1/2 cup brown sugar
1 teaspoon baking powder 185g butter

Preheat oven to 180 degrees celsius. Brush a shallow 30cm x 20cm tin with butter and line base and sides with baking paper.
Place flour, oats, coconut, sugar and cinnamon into a bowl and stir to combine. Make a well in the centre and pour in melted butter. Mix until all ingredienst are most. Firmly press into tin and place apple on top. Smooth with a fork and sprinkle extra cinnamon on top of apple.
Sift flour and baking powder into a bowl and stir in brown sugar. Rub in butter to a fine crumble mixture. Place on top of apple and press down.
Bake for 30 - 35 minutes until golden. Cool and cut into fingers or squares.

Apart from that, I have cleaned the house (bathrooms and floor etc), rearranged the dining room and done six loads of washing. Can you tell I'm feeling motivated today? I may even get some sewing done as well, but I'm not promising anything LOL. And lookie at what Sweetie did on the weekend!

Eventually, the handrailing will go all the way around the verandah - I can't wait to get rid of the ugly green lattice. It still needs some painting, but I think it looks fab!
